
Sunday mornings call for Breakfast At Tiffany’s and if there’s one thing you must know about me, it’s that I can’t watch Breakfast At Tiffany’s without a pastry. My pastry of choice is a croissant – plain, chocolate or almond.
Today it was almond and I found the perfect cheat’s version. In fact it’s so easy that Bella and her 15 month old cooking skills helped.
Ingredients
150g butter, softened
1/2 cup icing sugar, sifted – plus extra to dust
1/3 cup flour, sifted
2 cups almond meal
1 teaspoon almond essence
6 ready made croissants
1/3 cup flaked almonds
Method:
1. Preheat oven to 170 degrees C. Lime a baking tray with baking paper.
2. Place all ingredients except for croissants and flaked almonds in a food processor bowl and process until combined.
3. Split the croissants in half lengthways and fill each base with the mix reserving 1/4. Replace tops.
4. Spread remaining 1/4 mix over the croissant tops and sprinkle on flaked almonds.
5. Bake in oven for 10 minutes. Dust with icing sugar while warm. Serve.
