
I’ve always been about taking a dish and making it healthier but as a mum navigating through the difficult toddler years, it’s become even more important. Don’t get me wrong, Bella has some healthy (and odd) favourites – avocados, raw cauliflower, raw mushrooms and any kind of fruit – but if she had her way, her diet would consist mainly of mac and cheese, chocolate, fries and lasagne (after scraping out all of the meat sauce).
So here is a breakfast with extra healthy goodies that still feels like you’re having something dessert-like and indulgent for breakfast. It’s been pimped out to give her extra nutrients like magnesium, sulfur, vitamin C and omega fats.
Serves 1-2
(As always, try to keep everything organic – better for you and better for the planet)
Ingredients:
1/2 cup oats (instant or whole)
1 cup water
50g vegan dark chocolate (min 70%), broken into pieces
1 tablespoon cacao
1 tablespoon hemp seeds
1 tablespoon chia seeds
1 tablespoon honey
Any non dairy milk and berries (frozen or fresh), to serve
Method:
- Cook the oats with the water in a saucepan.
- Take the oats off the heat, add the chocolate and stir to melt.
- Stir in the cacao, hemp, chia and honey.
- Put in a bowl and add berries and milk. Devour.
